Does everyone know how important it is to drink water daily?  Of course we do.... but do we drink enough?  Nope... Why is it just so darn difficult to drink enough water on a daily basis?  I think it's because of the fact that are told we have to drink a specific number of ounces.  Well I think I found a way to make it easier for me because I truly do believe it is important and can solve many common ailments.  Headaches, dryness, fatigue, mood... These are all symptoms that I feel when I do not drink enough water daily.  So my solution is my cute pink polka dot acrylic reusable cup and straw!  It's adorable first of all and very fun so I'll be anxious to fill it and use it all the time... already it's done it's magic, for I drank 52 ounces of water from it today!  So make sure you drink your water and who knows how much better you'll start to feel!

This weekend is going to be fun!  We got our tax return and we are going to accomplish many things with it.  It's a very exciting time.  We are starting an emergency fund, helping out my mother since she helps us out so much as well, and going shopping for essentials!  We are going to load up our cupboards with yummy healthy staples and we are going to start a container garden so this tax return can keep on giving throughout the rest of the season with some fresh vegetables and herbs that we hope to plant.  I definitely will be a beginner at this so here's hoping that I can get our container garden to thrive!  My husband has a bit more experience so I have confidence. 

There is a book that I cannot wait to get my hands on (ooh maybe this weekend!)called The Backyard Homestead
It's all about growing all the food you need in your own backyard.  There's also a bit of information on raising farm animals as well.  DH and I aren't quite sure how far we would like to take our homestead when the time comes... we are torn... but I'll blog about that another day.  In this book it basically says (I have a preview of the book on my iPhone Nook reader) to make a list of things you eat on an everyday basis... and that is what you should start with in your garden.  So here's our list that hopefully we'll be able to get started this weekend...

  • Summer squash
  • Bell peppers
  • Tomatoes
  • Basil
That's pretty much our list for now.  One thing I've learned in life is if you want to be successful at something... start out small.  So that's plan!  What's on your gardening list?

Where does my inspiration come from for keeping my household together?  Several places... but when I really feel like I'm losing control I turn to Flylady.  Her methods and baby steps truly work... If I get way behind... and believe me I do... I start her baby steps again.  After a few last minute (necessary) trips at the beginning of the year I fell off the Flylady wagon so I've decided to begin the baby steps again this coming Monday.  I'm excited to start again because I was seeing such a difference before.  I'll definitely be blogging about that to keep me motivated.

While I'm on the subject of inspiration I have to give a big Thank You out to my husband.  He truly inspires me and motivates me to be the best homemaker I can be, if only for the fact that it is his dream as well.  As odd as it is to speak of ex's when you're already happily married, I bring it up only to prove a point... A guy I was dating pretty seriously, way back when, once told me that he would never be okay with his wife staying at home while he worked and brought in the income... I believe his exact words were "I'm not gonna work my butt off while you're home sitting and knitting".  I of course was appalled... because although at that time I couldn't have imagined what being a homemaker/stay at home mom really entailed, I did know enough to know that it was much more than "sitting and knitting".  So when I met my husband (or I should say "reconnected" but that's another post), it was a breath of fresh air to find out the kind of woman he wanted to marry was one who wanted to stay at home with the children and make their house a beautiful home and cook delicious meals.

I am so blessed to know this man and even more blessed to be married to him.  Oh and as frosting on the cake... One day all I did was crochet a baby blanket (I don't know how to knit)... and my husband thought it was the most magical thing ever! ;)

So here is my first attempt at trying to make a Mickey Mouse pancake! Hey not bad for my first try right?  At least my son has nothing to compare it to... he thought it was just as yummy as the others. 

This morning I added bananas into the batter... Delicious!  I think I'll try this with whatever I may have on hand every once in while but hanging on to the classic is just as yummy too. 

My newly discovered pancake magic has become somewhat of curse as it is a blessing... I can't seem to get my son to eat anything else!  Of course I do have to account for the fact that he is not well right now... but yesterday and today he ate... well... pancakes.  I just have to keep repeating to myself... they are whole grain, they have bananas, they are whole grain, they have bananas.  I'm really hoping that as he returns to a normal state of health that his appetite for a wide variety of foods returns as well.

I attempted to try out his taste buds with this adorable "Chick"en and cream cheese sandwich.  He was not a happy camper!  He just tore it into pieces and as a desperate measure I gave him a little dollop of yogurt for him to dip the pieces in and I thought that did it but he just proceeded to suck the yogurt off each piece.  So... I can make a little bit of magic... Miracles... I'm not so good at ;). 

In other news... I'm definitely hoping more magic comes my way.  My mother is leaving us to go back home after having been here for a few months.  The help she has given to us has been nothing short of AMAZING and all three of us, in addition to our furbabies... will miss her terribly.  Hopefully it won't be too long before she returns to us.

It really is!  And I learned that yesterday at the Farmer's Expo... all around me I had vegetables, herbs, flour, salsa's, ketchup, jams and jellies all of which were created by amazing people from fruits, vegetables and grains that they produced with their own two hands with the beautiful thing we call our earth for help.

The most exciting part of the day was meeting the farm where we will be getting our CSA share from.  They were an incredibly nice couple whose children and grandchildren help out with their farm.  The husband told me how they just put potatoes in the ground and how the green onions were just popping up!  The wife said to my son "We're growing your yummy vegetables!" and at that very moment is when I felt the magic.  What a miraculous wonder... my son, my husband and I will flourish on these wonderful nutrients that will be brought to our table straight from the soil.  How wondrous!

That's what I was doing this morning!  Dancing around the kitchen FULL of joy!  For the first time ever I decided to make a batch of homemade whole wheat pancakes.  I knew it was going to be a long stretch trying to get my 17 month old to eat them, but I really wanted the toaster waffles to take a back seat to his morning breakfast routine.  Mind you they are whole grain, organic, very healthy toaster waffles but still... they are toaster waffles.  So... I did a quick search for pancake recipes, got a general idea of what to use and came up with my own recipe. 

The joy came when I cut one up into bite size pieces and put it front of my son in his high chair... he stared at them for a bit unsure of what he wanted to do exactly.  And then all of the sudden, it was as if one of the long straps of my apron twirled around me and floated up towards his tray pushing his plate just an inch close saying, "go ahead..." he grabs one and puts it directly in his mouth without hesitating!  He proceeded to eat two whole pancakes as if they were what he is used to eating every single day!  I could barely contain my excitement!

The excitement continued through lunch... Grandma, baby and I went to Whole Foods for a few quick essentials and decided to grab some lunch.  We filled up a plate from the salad bar with a few things we thought my son would like.  When I came across the falafel I said... why not.  Well... he gobbled it up like a pro!  "Where's the tzatziki sauce!?" he said.... Okay not really, but he sure did enjoy it and his falafel loving parents are quite proud.  Talk about magic being in the air!!

I'm SO excited for tomorrow.  We will be going to a Eat Local & Organic Expo, where they will have a mini farmers market with early season crops and workshops on buying, canning and cooking local and organic ingredients.  I'm hoping we get to meet the farm we signed with for our CSA and we might even bring home a few goodies!  I'll definitely be taking pics!
